Coconut Cream Mousse
Serves 2
Ingredients:
* 1 can organic coconut milk, chilled in fridge overnight
* 1/2 tsp vanilla extract
* Pinch of ground cinnamon or to taste
* Pinch sea salt
Instructions:
Skim off the top layer of chilled coconut milk, that has thickened into coconut cream. Place into a medium bowl, leaving behind the water layer in the bottom of the can. Using a whisk or electric mixer, beat the coconut cream into desired texture.
With a spoon, add into the whipped coconut cream the vanilla, cinnamon, and salt. Divide mousse between two serving bowls (or enjoy it all yourself!)
To make Coconut Cream Chocolate Mousse, add 1 tablespoon unsweetened cacoa powder or more to taste, to coconut cream with cinnamon and salt.
Top with your favorite berries.
