Healthy French Toast

Are you looking for the perfect morning meal to share with your family?  Look no further than this delicious HEALTHY FRENCH TOAST recipe.  Even though it tastes like dessert (and would definitely work if you served it as a dessert...), it's actually good for you!

HEALTHY FRENCH TOAST:

EASY ALMOND FLOUR BREAD:

2 cups of almond flour or almond meal
½ tsp stevia, more or less to taste (each brand has slightly different sweetness)
1 Tbsp. baking powder (aluminum-free)
1 tsp. of sea salt 
5 organic free-range eggs (whisked)
½ cup of organic coconut milk
1/3 cup of coconut oil 

Preheat oven at 350 degrees. Mix the dry ingredients in a batter bowl. In a separate bowl, mix the wet ingredients, then combine dry and wet ingredients with a wooden spoon. Place the batter in a WELL-greased bread loaf pan and put in the oven. Bake for approximately 40 minutes (keep an eye on it)! When the bread is done baking, wait for it to cool down before slicing it. Store bread in refrigerator.

FRENCH TOAST:
4 eggs
2/3 cup organic coconut or almond milk
2 teaspoons of cinnamon
dash sea salt
1 tsp organic vanilla extract
8 thick slices of almond bread
coconut oil (for greasing pan)

Beat eggs, milk, vanilla, and cinnamon together. Whisk until well blended. Pour into a shallow bowl. Dip each slice of bread into the egg mixture, allowing bread to soak up some of the mixture. Melt some oil over a large skillet on medium high heat. Add as many slices of bread onto the skillet as will fit at a time. Fry until brown on both sides, flipping the bread when necessary. Serve hot with coconut icing and fresh berries.
Yield: Serves 4.


COCONUT-CREAM CHEESE ICING
1 8-oz block of organic cream cheese (Softened)
1/3 cup organic coconut milk
½ tsp vanilla
dash sea salt
½ tsp stevia, more or less to taste (each brand has slightly different sweetness)
½ cup unsweetened shredded coconut

Blend cream cheese, coconut milk, vanilla, sea salt, and stevia with hand mixer. Add shredded coconut and mix in with spoon, until mixture is uniformly.
