Is Ezekiel Bread Healthy?

People love bread.  I understand why.  Nowadays, however, people are starting to realize the health dangers that come along with consuming grains and are looking for healthier options.  Is Sprouted Grain/Ezekiel Bread a better option?  Today, we're going to find out.

For those that have health challenges, eliminating wheat, alone, might not be enough.  There are several foods in the standard american diet that have similar properties to wheat and should be avoided.  Wheat contains "chitin binding lectins" that are very similar to wheat germ agglutinin.  Chitins are polymers of n-acetyl-glucosamine, the binding target of lectin.  Chitin-binding lectin containing foods include:

* Potato
* Tomato
* Barley
* Rye 
* Rice

Sprouted grains, which is the category Ezekiel Bread falls under, are usually considered be a healthier option but still can be a problem.  Sprouted whole wheat contain the highest amount of lectin and also contain benzoxazinoids, which are known to be toxic.

Organic Sprouted Wheat, Filtered Water, Organic Sprouted Barley, Organic Sprouted Millet, Organic Malted Barley, Organic Sprouted Lentils, Organic Sprouted Soybeans, Organic Sprouted Spelt, Fresh Yeast, Organic Wheat Gluten, Sea Salt.

Notice the gluten?  That's not the only problem.

Wheat, maize, and rye, which are the sprouts of grain are usually considered to be healthy.  However, as already mentioned, sprouted grains have the HIGHEST amount of wheat lectin and benzoxazinoids (BA's).  Benzoxazinoids are part of the plant's defense system against pests and are toxic components.  A 2007 study published in journal Cancer Letters investigated the mutagenic activities of BA's in sprouted grains.  Both types of BA were found to be capable of altering genetic material and also found to affect cell division and lead to aneuploidy, which is an incorrect number of chromosomes.

It's estimated that 80% of Americans are insulin resistant.  If that's you, it would be in your best interest to participate in a nutrition plan that eliminates sugar and grains.  The good news is that ARE safe, healthy options that won't create inflammation and drive disease.  The following should also be avoided:

* Whole organic grains
* Sprouted grains
* Wheat
* Spelt 
* Millet
* Amaranth
* Quinoa
* Barley
* Rye
* Rice
* Potatoes
