Coconut Berry Ice Cream

When it's hot outside, a delicious, cool treat is the way to go.  As you would expect, this sweet treat is also healthy, and, because its high in GOOD fats, it will help you burn fat, too!  

Homemade Coconut Berry Ice Cream

Ingredients:
1 can organic coconut milk (full-fat!)
1 cup frozen blueberries
1 scoop vanilla protein (we prefer vegan plant protein or grass-fed when protein, both sweetened with stevia)
1 pinch of salt
1/2 tsp liquid stevia (we prefer Sweet Leaf or Stevita brand)

Instructions:
1. Add all ingredients to high speed blender.  Blend until uniform consistency (like a thick smoothie).
2. Pour mixture into ice cream maker.  When ice cream is frozen, you can enjoy it then, or put it in the freezer for an hour or two to firm up a little more.
*If you don't have an ice cream maker, simply blend ingredients in a high-powered blender, then pour into a freezer-safe bowl and freeze for at least 4 hours.

Enjoy!

Experiment!  Try using other frozen berries to switch up the flavor!  Add some raw nuts or more berries on top.

Add 2-3 raw egg yolks to make this a custard!
