SUPERFOOD Creamy Broccoli Soup
This recipe was birthed from a ridiculous amount of left-over roasted broccoli. You don't have to use left-overs, but if you do, you can whip up this delicious soup in under 5 minutes.
Ingredients:
1 bunch roasted broccoli (can also use raw, but roasted gives added flavor)
1 ripe avocado
1 can full-fat organic coconut milk
1/2 cup organic extra virgin olive oil
sea salt, to taste
Instructions:
1. Combine all all ingredients EXCEPT 1/3 of broccoli in a blender or food processor and blend until creamy. 2. Add remaining broccoli and pulse several times, to chop.
3. Pour contents into a sauce pan and heat until gently bubbling. (OR, if you have a super-powered blended with a "soup" setting, you can skip this step and save yourself a dirty dish to wash!)
