Gruyere and Goat Cheese Frittata
Eggs are very versatile ingredients and can serve as a meal on their own or be added to other dishes. Try to buy pastured eggs whenever possible or, at the very least, organic, free-range. Frittatas are quick and easy. Enjoy!
Serves 4
- 1 tablespoon olive oil/coconut oil
- 1 medium onion, chopped
- 1/2 teaspoon himalayan sea salt
- 1/2 teaspoon pepper
- 1 pound spinach leaves, washed and chopped
- 1 tablespoon water
- 9 large eggs, beaten
- 3 ounces goat cheese, crumbled
- 1/4 cup grated Gruyere cheese
Instructions:
- Preheat oven to 400 degrees
In an ovenproof skillet over medium-high heat, add the oil and heat until hot. Add the onions, salt, and pepper. Cook 3-4 minutes while stirring occasionally, until the onions are translucent. Add the spinach and water and cook, while mixing, until the spinach is wilted (about 1-2 minutes). Pour in the eggs and sprinkle on goat cheese and Gruyere. Cook 1-2 minutes, until the mixture begins to set around the edges. Then transfer the skillet to the oven and bake until set, 10 to 12 minutes.
Remove from oven and serve.
