Healthy Caramel Apples
Ingredients:
- 3 Granny Smith apples
- 2 tablespoons unsweetened almond butter (cashew butter also works well)
- 2 tablespoons organic coconut oil
- 2 tablespoons raw honey
- 1/2 teaspoon vanilla extract
- pinch of sea salt
Instructions:
1. Push wooden skewers into the top of the apples and set them aside until caramel sauce is ready.
2. Heat the coconut oil in a saucepan over low heat. Add in the nut butter, honey, vanilla extract, and sea salt. Stir continuously until mixture is fully combined, about 3 minutes. Remove from heat and let cool for a few minutes to let caramel thicken slightly.
3. Swirl apples in caramel one at a time, coating one-half to three-quarters of each apple.
4. Dip caramel-coated apples into desired toppings, (such as shredded unsweetened coconut, chopped nuts, etc), using your fingers to help them adhere.
5. Place on parchment-lined baking sheet and let them set for about 30 minutes. Enjoy!
