Blueberry Chia Porridge 

Ingredients
  • 1 cup full-fat canned coconut milk
  • 1/3 cup frozen organic blueberries
  • 1 vanilla bean, cut in half
  • 1 tablespoon ground flax seed
  • 2 tablespoons chia seeds
  • 4 tablespoons unsweetened shredded coconut 
  • Pinch sea salt
  • Raw nuts to garnish
Instructions
  1. Pour the coconut milk and blueberries into a small to medium-sized saucepan. Slice vanilla bean in half, lengthwise, and scrape seeds into milk. Warm the milk over medium-heat until it comes to a gentle boil. Add the flax, chia, and coconut, and stir to combine. Reduce the heat to simmer and stir over low heat until porridge thickens.
  2. Season with a small pinch of salt. Serve immediately with nuts, and honey drizzled over top.
