Healthy, Fat-Burning Ice Cream

Ice cream is a delicious treat any time of year, and if you are making this recipe, it can also be healthy!

Healthy, Fat-Burning Ice Cream

**Note:  You'll need to purchase or borrow an ice cream maker for this recipe (If you're like us and receive 2-3 coupons per week for that bed, bath, and kitchen store, you can put one of those coupons to good use!)

1/2 cup extra virgin, cold-pressed, organic coconut oil
1/2 cup grass-fed butter
4 large egg yolks (preferably pastured eggs)
2 large eggs (preferably pastured eggs)
1/4 cup erythritol, powdered
25-30 drops Stevia
1 cup coconut milk or heavy whipping cream
2 vanilla beans or 2 tablespoons vanilla extract
1 cup berries (optional)

Instructions:

1. Separate egg yolks from egg whites.  Make sure butter and coconut oil are softened. 

2. Mix butter, coconut oil, vanilla extract, erythritol and stevia together.

3. Slowly add the egg yolks and whole eggs while blending one by one.

4. Process until smooth

5. Pour in coconut milk and keep blending.  If mixture is lumpy, you can use a food processor.  

6.  Add mixture to ice cream maker and process according to manufacturer's instructions.

7.  Half way through, remove from the ice cream maker.  Use blender and pulse until smooth.  

8.  Return to ice cream maker and continue until ice cream is done.  Eat immediately or place in freezer for 30-60 minutes if too soft.
