Coconut Flour Zucchini Bread Recipe
Ingredients:
1 medium to large sized zucchini (shredded)
4 pastured eggs
1 teaspoon stevia
1 banana
1 tablespoon coconut oil
1/2 cup coconut flour
3/4 teaspoon baking soda
1/2 teaspoon sea salt
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon apple cider vinegar
1/2 cup pecans or walnuts (optional)
Instructions:
- Preheat oven to 350
- Grease pan with coconut oil
- make sure zucchini is shredded then add the ingredients together
- add nuts if you're using them
- Pour mixture into bread loaf pan and cook for 45 minutes
