RICH & CHEWY CHOCOLATE ALMOND COOKIES
Makes 16 cookies
2 cups almond meal
1/2 erythritol/ Swerve
1/4 tsp salt
1/4 tsp vanilla extract
2 Tbsp cocoa powder
Preheat oven to 350 and line a baking sheet with parchment paper or a Silpat. In a bowl stir together the almond flour, cocoa powder, erythritol/Swerve and salt to combine. Stir in the egg and vanilla extract; it will take a little elbow grease, but eventually it will form a thick dough. Drop the dough by the tablespoon onto the prepared baking sheet. Bake at 350 for 15 minutes. Let cool completely before removing from the pan (otherwise they’ll stick!).
